Preparation
- Wash the fennel, remove the hard core, and cut the vegetable into fine cubes. Peel and core the apple, then finely cube it as well.
- Peel and very finely chop the onion. Warm the oil gently in a pot over medium heat. Sauté the onion and fennel until translucent (about 3 to 4 minutes).
- Add the risotto rice, sauté briefly, and then deglaze with a little vegetable broth. Reduce the heat slightly and let the liquid simmer down while stirring.
