Preparation

- Mash the banana thoroughly with a fork in a large bowl until smooth.
- Add the applesauce, egg, canola oil, and milk to the mashed banana, stirring everything together well.
- In a separate bowl, whisk together the flour, baking powder, and gingerbread spice.
- Quickly fold the dry ingredients into the wet mixture until a thick, smooth batter forms.
- Divide the batter evenly among about six muffin cups and bake for 20 to 25 minutes.
- Let the muffins cool completely. Always check the temperature inside before serving, as the fruit puree retains heat for a long time.
