
Mild Gnocchi in Creamy Pumpkin Sauce for Pregnancy
Appetite can be quite unpredictable, especially in the early weeks of pregnancy. This mild dish with gnocchi and pumpkin warms you from the inside and is very gentle on the stomach. The creamy sauce provides valuable nutrients and is easy to eat, even when large meals feel overwhelming.
Ingredients
- 400 g gnocchi (store-bought, chilled)
- 300 g Hokkaido pumpkin or butternut squash (diced)
- 1 small onion
- 1 tbsp olive oil
- 150 ml vegetable broth
- 100 g cream cheese (made from pasteurized milk)
- A pinch of salt, a little nutmeg, and mild herbs of your choice
Instructions
- Wash the pumpkin, remove the seeds, and cut it into small cubes.
- Finely dice the onion and sauté it in a pan with olive oil until translucent.
- Add the diced pumpkin and sauté briefly.
- Pour in the vegetable broth and simmer over medium heat for about ten minutes until soft.
- Stir in the cream cheese and blend the sauce until smooth using an immersion blender.
- Cook the gnocchi in boiling water according to the package instructions until they float to the top.
- Drain the gnocchi, fold them into the warm pumpkin sauce, and season gently with salt, nutmeg, and herbs.
Good to know
The sauce is perfect for batch cooking and freezes wonderfully. This gives you a quick, warm meal on days when fatigue sets in. If you prefer a bit of crunch, you can sprinkle some roasted pumpkin seeds on top.
When things feel hard
If you are experiencing strong nausea, you can simply leave out the onion and spices. The gnocchi also taste comforting plain with a little butter or just a splash of lightly salted broth.
