Introduction

Ingredients
For 2 to 3 portions you will need:
- 300 g mixed minced meat (preferably organic)
- 1 small day old bread roll (soaked in a little water)
- 1 onion (very finely diced)
- 1 egg
- 500 ml mild vegetable broth
- 2 tbsp butter
- 2 tbsp wheat flour
- 100 ml cream
- 1 tsp lemon juice
- 1 tsp mild capers (optional, finely chopped)
- 400 g waxy potatoes
- A pinch of nutmeg and some fresh parsley
Preparation
- Peel the potatoes, cut them into bite-sized pieces, and boil them in a pot of water for about 20 minutes until soft.
- Squeeze the soaked bread roll well and mix it with the minced meat, the egg, and half of the diced onion in a bowl.
- Shape the mixture into small, bite-sized balls using moistened hands.
- Bring the vegetable broth to a boil in a wide pot, reduce the heat, and gently poach the meatballs in it for about 15 minutes.
- Remove the cooked meatballs with a slotted spoon and save the broth for the sauce.
- Melt the butter in a second pot, stir in the flour, and cook briefly, then gradually pour in 300 ml of the warm broth while stirring continuously.
- Let the sauce simmer for about 5 minutes until a smooth, creamy texture forms.
- Stir in the cream, lemon juice, and the chopped capers if using, then return the meatballs to the sauce to warm through.
- Let the dish cool down a bit before serving and always test the temperature before offering it to your child.
Variations and Tips
- Hidden Veggies: You can mix finely grated carrots or zucchini into the meatball mixture.
- Storage: The dish can be kept covered in the refrigerator for up to two days. The sauce and meatballs also freeze well and last for up to three months.
- Family Upgrade: Adults can season their portions at the table with more salt, pepper, and whole capers.
