
Mild Königsberger Klopse with Rice for the Whole Family
Introduction
These mild Königsberger Klopse are a wonderful family meal that many children truly enjoy. The soft meatballs are easy to chew, while the creamy sauce makes the rice deliciously moist. At the same time, this dish provides valuable iron from the meat and long-lasting energy from the rice.
Ingredients
For 2 to 3 portions you will need:
- 250 g mixed minced meat (beef and pork, ideally organic)
- 1 small bread roll from the day before or 3 tbsp breadcrumbs
- 1 egg
- 1 small onion (very finely diced)
- 1 pinch of salt and mild pepper
- 500 ml mild vegetable broth
- 2 tbsp butter
- 2 tbsp wheat flour
- 100 ml heavy cream
- 1 tsp lemon juice
- Optional: 1 tsp very finely chopped capers
- 150 g rice (such as basmati or parboiled)
Preparation
- Soak the bread roll in a little warm water, then squeeze out the excess moisture well. Knead it together with the minced meat, egg, diced onion, and a pinch of salt and pepper until you have a smooth mixture.
- Using damp hands, form the mixture into small, bite-sized balls.
- Bring the vegetable broth to a boil in a wide pot and reduce the heat so the water is just gently simmering. Add the meatballs and let them poach for about 15 minutes until they rise to the surface.
- Cook the rice in lightly salted water according to the package instructions.
- Lift the finished meatballs out of the broth with a slotted spoon and set them aside. Keep the broth to use for the sauce.
- In a second pot, melt the butter, stir in the flour, and sauté briefly. Gradually whisk in about 350 ml of the reserved broth and the cream until a smooth, thick sauce forms.
- Let the sauce simmer gently for about 5 minutes, then season with lemon juice and the finely chopped capers. Return the meatballs to the sauce and warm them through briefly.
- Allow the dish to cool down well before serving. Always check the temperature before your child takes the first bite.
Variations & Tips
- Vegetable addition: Mix finely grated carrots into the meat mixture to make the dish even juicier and more colorful.
- For the parents: Adults can add whole capers, a little more salt, and fresh black pepper to their own portions at the table.
- Storage: Leftovers keep in the fridge for about two days. The meatballs and sauce freeze exceptionally well and can be stored for up to three months.
- Adjusting texture: For children who prefer completely smooth sauces, you can briefly blend the sauce with an immersion blender before adding the meatballs back in.
