Mild Macaroni Casserole with Creamy Cauliflower Cheese Sauce
Introduction
Short macaroni noodles are baked in a puréed sauce made from soft-boiled cauliflower and mild cheese. The pasta becomes wonderfully soft, and the creamy sauce clings to it perfectly, making it much easier for little hands to eat with a spoon or fork. This is a great way for children who might usually ignore vegetables to happily enjoy a portion of cauliflower. This dish is fantastic for children from 12 months of age who are now actively joining in at the family table and enjoying the same meals as their parents. It provides valuable energy for the day and combines the familiar, comforting taste of cheese with nutritious vegetables.
Ingredients
- 150 g short macaroni (or other small pasta shapes)
- 200 g cauliflower (fresh or frozen)
- 100 ml whole milk
- 50 g mild cheese (for example, grated Gouda or mild cheddar)
- 1 tsp canola oil
- 1 pinch of nutmeg
- 1 pinch of mild black pepper
- Optional: fresh parsley for garnish
Preparation
- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
- Break the cauliflower into small florets and boil them in a pot with a little water for about 10 minutes until very soft.
- Meanwhile, cook the macaroni according to the package instructions until they are nice and tender.
- Drain the soft cauliflower and blend it together with the milk, canola oil, and half of the cheese until a smooth, creamy mixture forms. Season mildly with nutmeg and black pepper.
- Mix the cooked pasta with the cauliflower sauce and pour everything into a small baking dish.
- Sprinkle the remaining cheese evenly over the casserole and bake in the oven for about 15 minutes, until the cheese has melted.
- Allow the casserole to cool down well before serving. Always test the temperature yourself before offering the first bite to your child.
Variations and Tips
- Different Vegetables: You can easily replace the cauliflower with broccoli or soft-boiled carrots. This creates a new, colorful variation of the dish.
- Storage: Leftovers can be kept in an airtight container in the fridge for about two days. You can also freeze the casserole in portions and gently reheat it when needed.
- For the Parents: Since this dish is very mild, adults can simply season their own portion at the table with a little salt, chili flakes, or fresh herbs.
