
Mild Meatballs in White Sauce with Soft Boiled Potatoes
These mild meatballs in a creamy white sauce make a wonderful meal for the family table. The soft boiled potatoes are easy to mash with a fork, which gives many children great joy as they practice eating independently. At the same time, the beef provides valuable iron for healthy growth.
Ingredients
For 2 to 3 portions, you will need the following ingredients:
- 250 g ground beef (organic preferred)
- 1 small onion
- 1 tbsp canola oil
- 200 ml low-sodium vegetable broth
- 100 ml whole milk (3.5% fat) or oat cream
- 1 tbsp flour (wheat or spelt)
- 1 pinch of black pepper
- 1 tsp dried parsley
- 400 g waxy potatoes
Preparation
- Peel the potatoes, cut them into bite-sized pieces, and boil in lightly salted water for about 20 minutes until soft.
- Finely dice the onion and mix it thoroughly with the ground beef and dried parsley.
- Shape the meat mixture into small, bite-sized balls.
- Heat the canola oil in a pan and gently brown the meatballs on all sides over medium heat.
- Dust the flour over the meatballs, cook briefly, and deglaze with the vegetable broth and milk.
- Let the sauce simmer over low heat for about 10 minutes until the meatballs are fully cooked through and the sauce thickens.
- Allow the dish to cool down well and check the temperature before serving.
Variations and Tips
- Hidden Veggies: Finely grate half a carrot or some zucchini and mix it directly into the meat mixture.
- Storage: Leftovers keep well in an airtight container in the fridge for up to two days. The meatballs and sauce also freeze beautifully and last for up to three months.
