Mild Pasta with Creamy Spinach Cream Cheese Sauce
During the first weeks of pregnancy, your appetite can often fluctuate. This mild pasta dish with a creamy spinach sauce is easy on the stomach while providing important nutrients for you. It is wonderfully quick to prepare when your energy levels are low.
Ingredients
- 250 g pasta (whole wheat or spelt work well)
- 150 g fresh baby spinach (washed thoroughly)
- 100 g cream cheese (made from pasteurized milk)
- 1 small onion
- 1 tablespoon olive oil
- A splash of vegetable broth
- A pinch of salt and nutmeg
Preparation
- Cook the pasta in lightly salted water according to the package instructions.
- Finely dice the onion and sauté it in a pan with the olive oil until translucent.
- Add the washed baby spinach and let it wilt briefly.
- Stir in the cream cheese and a small splash of vegetable broth until a creamy sauce forms.
- Season the sauce with a little salt and nutmeg, then mix everything with the pasta.
Good to know
Fresh spinach contains valuable folate, which is especially beneficial in early pregnancy. If you are short on time, you can easily use frozen leaf spinach instead. Just make sure the cream cheese package says it is made from pasteurized milk to be on the safe side.
When things feel difficult
If you are experiencing strong morning sickness, you can simply leave out the onions and nutmeg. The pasta also tastes great with just a little cream cheese and a pinch of salt, which often helps to gently settle the stomach.
