Mild Pea and Corn Fritters for Toddlers

Introduction

These small, savory pancakes with sweet peas and corn kernels make a wonderful snack for your child. They are slightly crispy on the outside and beautifully soft on the inside, making them an ideal finger food. Ingredients

  • 100 g frozen peas
  • 100 g sweet corn (canned, unsweetened, or frozen)
  • 2 eggs
  • 50 g wheat or spelt flour
  • 2 tablespoons milk (cow's milk or plant-based)
  • 1 pinch mild paprika powder
  • 1 teaspoon chopped parsley
  • A little canola oil for frying

Preparation

  1. Rinse the peas and corn in a sieve with hot water and let them drain well.
  2. In a bowl, whisk the eggs with the milk.
  3. Add the flour, paprika powder, and parsley, mixing until a smooth batter forms.
  4. Gently fold the peas and corn into the batter.
  5. Heat a little canola oil in a pan over medium heat.
  6. Place about one tablespoon of batter per fritter into the pan and press flat.
  7. Fry the fritters for about three to four minutes on each side until golden brown.
  8. Drain on a paper towel and let them cool down thoroughly before serving to prevent burns in the mouth.

Variations & Tips

  • Vary the vegetables: You can use finely grated carrots or zucchini instead of corn. Squeeze out any watery vegetables beforehand.
  • Storage: The fritters will keep in an airtight container in the fridge for about two days. They also freeze exceptionally well and can be reheated in the toaster or oven as needed.
  • Adjust the texture: For children who are still practicing how to chew, you can lightly mash the corn kernels and peas with a fork before mixing them in.
  • For the whole family: Adults can enhance their fritters at the table with a pinch of salt and pepper, along with a fresh herb dip.
