Mild Pea Stew with Potatoes and Sausages

This warming pea stew is a wonderful family meal that many children enjoy from around three years of age. The soft potato chunks and mild sausage slices are easy to scoop up and chew. Peas also provide valuable plant-based proteins and fiber for active growing bodies. Parents can easily prepare this dish ahead of time, as it tastes just as delicious warmed up the next day.

Ingredients

  • 300 g frozen peas (organic if possible)
  • 300 g waxy potatoes
  • 1 medium carrot
  • 1 small onion
  • 1 tbsp canola oil or mild olive oil
  • 500 ml mild vegetable broth (low sodium)
  • 2 mild frankfurters or vegetarian sausages
  • 1 pinch dried marjoram
  • 1 tbsp fresh parsley (chopped)

Portion size: 2 to 3 portions

Preparation

  1. Peel the potatoes, carrot, and onion. Cut the potatoes and carrot into small, bite-sized cubes, and finely dice the onion.
  2. Heat the oil in a pot over medium heat. Sauté the diced onion until translucent.
  3. Add the potato and carrot cubes and cook briefly. Pour in the vegetable broth and stir in the dried marjoram.
  4. Cover the pot and let the stew simmer gently over medium heat for about 15 minutes. Check with a fork to see if the potatoes are soft.
  5. Add the frozen peas and simmer for another 5 minutes. Cut the sausages into thin slices and warm them in the stew during the last 2 minutes.
  6. For a creamier texture, mash a small portion of the stew with a fork or blend it briefly. Stir well, let it cool slightly, and always check the temperature before serving.

Variations and Tips

  • Different vegetables: Swap the carrots for parsnips or sweet potatoes to give the stew a naturally sweeter flavor.
  • Storage: The stew keeps well in an airtight container in the fridge for up to two days. It also freezes beautifully in individual portions.
  • Texture adjustment: If your child prefers smoother textures, you can blend the stew a bit more before adding the sausages.
  • Family tip: Adults can season their own bowls at the table with a pinch of black pepper, extra salt, or a dab of mustard.
