Mild Potato and Zucchini Omelet for Pregnancy
During the early weeks of pregnancy, your stomach is often quite sensitive. This mild potato and zucchini omelet is gentle on digestion while providing valuable energy. It tastes wonderful both warm and cold.
Ingredients
For 2 to 3 portions you will need:
- 300 g waxy potatoes
- 1 small zucchini
- 4 eggs (medium)
- 2 tbsp pasteurized milk
- 1 pinch of salt and a little mild paprika
- 1 tbsp canola or olive oil for frying
Preparation
- Peel the potatoes and cut them into small cubes.
- Wash the zucchini and grate the vegetable coarsely.
- Heat the oil in a non-stick pan and fry the potato cubes over medium heat for about ten minutes until soft.
- Meanwhile, whisk the eggs with the milk, salt, and paprika.
- Add the grated zucchini to the potatoes in the pan and sauté everything together for two minutes.
- Pour the egg mixture evenly over the vegetables.
- Let the omelet cook completely over low heat with the lid closed for about ten minutes.
Good to know
This omelet is perfect for preparing the night before and enjoying cold the next day. You can easily adapt the vegetables to your liking, for example by adding finely grated carrots.
If it's hard right now
If you experience strong morning sickness, you can skip the spices entirely and just try a small corner of the cold omelet. Cold food releases fewer odors, which is often much easier on the stomach.
