Ingredients
- 500 g waxy potatoes (organic preferred)
- 2 red bell peppers
- 1 onion

- 4 Vienna sausages (or mild frankfurters)
- 1 pinch of black pepper (use salt sparingly, as the sausages and broth are already savory)
Preparation
- Peel the potatoes and cut them into small, bite-sized cubes. Wash the bell peppers, remove the seeds, and dice them finely as well.
- Peel and chop the onion into very fine pieces. Heat the canola oil in a large pot over medium heat and sauté the onions until they are translucent.
- Add the potato cubes and bell pepper pieces, sautéing everything briefly. Sprinkle the sweet paprika powder on top and stir well to release the flavors.
- Pour in the vegetable broth to deglaze the vegetables. Let the goulash simmer gently over medium heat for about 15 to 20 minutes, until the potatoes are nice and soft and a slightly creamy consistency forms.
- Cut the Vienna sausages into thin slices and add them to the pot for the last 5 minutes to warm through.
- Remove the pot from the stove and let the goulash cool down a bit. Always check the temperature before serving to ensure your child does not burn their mouth.
