
Mild Red Lentil Dal with Coconut Milk and Rice for Pregnancy
During pregnancy, a warm and nourishing meal often feels incredibly comforting. This mild lentil dal with creamy coconut milk provides valuable energy for you and your growing baby. It is gently spiced and easy on the stomach.
Ingredients (for 2 to 3 servings)
- 150 g red lentils
- 200 ml coconut milk
- 300 ml vegetable broth
- 1 small onion
- 1 carrot
- 1 tsp mild curry powder
- A little canola oil for sautéing
- 150 g rice (such as basmati)
Preparation
- Rinse the red lentils thoroughly in a fine mesh sieve.
- Cook the rice in a separate pot according to the package instructions.
- Finely dice the onion and the carrot.
- Gently sauté the vegetables in a pot with a little canola oil.
- Add the curry powder briefly and let it toast slightly.
- Stir in the lentils and pour in the vegetable broth and coconut milk.
- Let the dal simmer over medium heat for about 15 to 20 minutes until the lentils are soft.
Good to know
This dal is great for meal prep and stores well in the fridge. It often tastes even better the next day and is quick to reheat. You can easily add other mild vegetables like zucchini or sweet potatoes.
When things feel difficult
If you are experiencing heartburn or nausea, you can skip the curry powder entirely. A simple pinch of salt is often enough for flavor. Eating several small portions throughout the day can also help reduce stomach strain.
