Preparation
- Rinse the red lentils thoroughly in a fine mesh sieve under running water.
- Peel the potatoes and carrot, then cut them into very small, bite-sized cubes.
- Heat the oil in a small pot over medium heat and gently sauté the vegetables for two minutes.
- Add the lentils, pour in the low-sodium vegetable broth, and bring the mixture to a gentle boil.
- Let it simmer gently on low heat for about 15 to 20 minutes, until the lentils are almost breaking down and the vegetables are soft.
- Stir in a pinch of paprika and the fresh parsley for extra flavor.
- Let the stew cool down well before serving, and always check the temperature before offering it to your child.
