
Mild Salsify and Potato Puree for Early Weaning
Salsify offers a very mild, slightly nutty flavor that many babies enjoy. It is highly digestible, making it a wonderful choice for those first few spoonfuls of solid food. Combined with potatoes and a splash of rapeseed oil, this creates a smooth, creamy puree.
Ingredients
- 150 g salsify (fresh or from a jar, unsalted)
- 100 g potatoes (all-purpose)
- 1 tbsp rapeseed oil (suitable for weaning)
- approx. 50 ml water (cooking water or boiled water)
Preparation
- Peel and wash the potatoes, then cut them into small cubes.
- If using fresh salsify, scrub under running water, peel, and chop into small pieces. It is helpful to wear gloves while peeling, as the sap is sticky and can stain hands.
- Place the vegetables in a small pot with a little water and bring to a boil. Simmer gently over medium heat for about 15 minutes until soft.
- Drain the remaining cooking water and catch it in a separate container. Add the rapeseed oil to the cooked vegetables.
- Blend everything very finely using a hand blender. Gradually add some of the reserved cooking water until you reach a completely smooth, creamy texture with no lumps.
- Allow the puree to cool down. Always test the temperature on the back of your hand before feeding your child.
Variations & Tips
- Swaps: You can easily replace the regular potatoes with sweet potatoes. This gives the puree a gentle, sweet note.
- Storage: The fresh puree keeps in the fridge for up to two days. It is also excellent for freezing.
- Portioning: Pour the puree into ice cube trays. This allows you to thaw small portions of two to three spoons as needed in the beginning.
- Family Tip: Parents can enjoy this puree as a side dish by simply seasoning the adult portion with salt, pepper, and a pinch of nutmeg.

Introduce new ingredients one at a time and in small amounts. This helps you observe how your child tolerates the new food. This recipe is naturally low in allergens and does not contain any of the 14 major EU allergens.
