Mild Savoy Cabbage Stew with Potatoes and Mini Meatballs

Introduction

This warming winter stew is a wonderful way to introduce mild cabbage to young palates. The finely chopped savoy cabbage becomes very tender during cooking, while the bite-sized meatballs make the dish especially appealing to children. It offers a comforting, creamy texture that many children enjoy during the colder months.

Ingredients

For two to three portions, you will need:

  • 250 g savoy cabbage (hard stems removed, finely shredded)
  • 300 g potatoes (waxy or all-purpose)
  • 1 small onion
  • 1 tbsp canola oil or mild olive oil
  • 500 ml mild vegetable broth (low sodium)
  • 200 g mixed ground meat (beef and pork)
  • 1 tbsp breadcrumbs
  • 1 pinch sweet paprika
  • 1 pinch ground nutmeg
  • A little fresh parsley

Preparation

  1. Wash the cabbage thoroughly, remove the tough core, and slice the leaves into very thin strips. Peel the potatoes and cut them into small, bite-sized cubes.
  2. Peel and finely chop the onion, then sauté half of it in a pot with the oil until translucent. Add the cabbage and potato cubes, cooking them briefly.
  3. Pour in the vegetable broth. Cover the pot and let everything simmer gently over medium heat for about 15 to 20 minutes.
  4. Meanwhile, mix the ground meat with the remaining onion, breadcrumbs, and a pinch of sweet paprika. Roll the mixture into small, bite-sized meatballs.
  5. Carefully place the meatballs into the simmering stew. Cook everything together for another 10 minutes until the meat is completely cooked through.
  6. Finish the dish with a pinch of nutmeg and finely chopped parsley. Let the stew cool down well and always test the temperature before serving.

Variations and Tips

  • If you prefer a sweeter flavor, you can replace the savoy cabbage with mild pointed cabbage or add some diced carrots to the pot.
  • The stew can be stored in an airtight container in the fridge for up to two days. It also freezes beautifully in individual portions.
  • Parents can easily customize their own bowls at the table by adding salt, black pepper, or a dollop of sour cream.
  • To create an even creamier texture, gently mash a few of the potato cubes directly in the pot before serving.
