
Mild Sheet-Pan Onion Cake for the Whole Family
This hearty autumn classic, based on a fluffy yeast dough, fits wonderfully into the cooler season. Gentle steaming makes the onions beautifully sweet and mild, which makes the cake very appealing to many children. The creamy sour cream and egg mixture provides a juicy texture that is easy to chew.
Ingredients
For the dough:
- 250 g wheat or spelt flour (organic if possible)
- 125 ml lukewarm water
- 21 g fresh yeast (half a cube)
- 2 tbsp canola oil
For the topping:
- 500 g mild onions (sweet onions work best)
- 50 g lean diced bacon
- 1 tbsp canola oil
- 200 g sour cream
- 2 eggs
- A small pinch of black pepper
- Optional: a little ground caraway
Preparation
- Dissolve the yeast in the lukewarm water, then knead with the flour and canola oil until a smooth dough forms. Cover and let the dough rest in a warm place for about 45 minutes.
- Peel the onions, halve them, and cut into fine rings. In a pan with a little oil, gently sauté the bacon and onions over medium heat for 10 to 15 minutes until they are very soft and translucent.
- Let the onion mixture cool briefly. In a large bowl, whisk the sour cream with the eggs and spices, then gently fold in the onions.
- Preheat the oven to 200 degrees Celsius (standard top and bottom heat). Roll out the dough evenly on a small greased baking sheet or one lined with parchment paper.
- Spread the onion and sour cream mixture evenly over the dough. Bake the onion cake in the oven for 25 to 30 minutes until golden brown.
- Let it cool well before serving. Always do a temperature test before your child takes the first bite.
