
Mild Sheet Pan Onion Cake with Sweet Apples and Gouda
Introduction

Ingredients
For 2 to 3 portions you will need:
- 250 g all-purpose or spelt flour
- 125 ml lukewarm water
- 1/2 cube fresh yeast (about 21 g) or 1 packet dry yeast
- 2 tbsp olive oil
- 3 mild sweet onions
- 2 sweet apples (like Gala or Fuji)
- 150 g sour cream
- 100 g grated Gouda cheese
- 1 pinch ground nutmeg
- A little canola oil for sautéing
Preparation
- Dissolve the yeast in the lukewarm water. Place the flour and olive oil in a bowl, add the yeast water, and knead everything into a smooth dough.
- Cover the dough and let it rest in a warm place for about 45 minutes until it has visibly doubled in size.
- Meanwhile, peel the onions and cut them into fine rings. Peel and core the apples, then cut them into small cubes.
- Heat a little canola oil in a pan and sauté the onions over medium heat for about 10 minutes until they are translucent and soft. Briefly sauté the apple cubes with them, then let the mixture cool down.
- Preheat the oven to 200 degrees Celsius top and bottom heat. Roll out the dough on a baking sheet lined with parchment paper.
- Mix the sour cream with a pinch of nutmeg and spread it evenly over the dough. Distribute the onion and apple mixture on top and sprinkle with the grated Gouda.
- Bake the cake in the preheated oven for about 20 to 25 minutes until golden brown. Let it cool well before serving and always check the temperature so your child does not burn their mouth.
