Mild Zucchini Mini Pizzas with Gouda for Kids

Thick zucchini slices serve as a healthy base for these little pizzas. Topped with a mild tomato sauce and melted Gouda, they make a wonderful savory snack. It is a perfect way to make vegetables appealing and fun for children aged three and up. The recipe is wonderfully uncomplicated for everyday life and can easily be prepared together with the little ones. Cooking together makes eating even more enjoyable.

Ingredients

For 2 to 3 portions you will need:

  • 1 large zucchini (organic preferred)
  • 4 tablespoons strained tomatoes (tomato puree)
  • 1 teaspoon olive oil
  • 0.5 teaspoons dried oregano or basil
  • 50 grams grated Gouda cheese (pasteurized and mild)
  • A pinch of mild paprika (optional)

Preparation

  1. Preheat the oven to 200 degrees Celsius (top and bottom heat) and line a baking sheet with parchment paper.
  2. Wash the zucchini, trim the ends, and cut it into slices about 1 to 1.5 centimeters thick.
  3. Mix the strained tomatoes with the olive oil and dried oregano in a small bowl.
  4. Arrange the zucchini slices on the baking sheet and spread a little tomato sauce on each slice.
  5. Sprinkle the grated Gouda evenly over the zucchini slices.
  6. Bake the mini pizzas in the oven for about 12 to 15 minutes, until the cheese is melted and slightly golden brown.
  7. Let them cool down well before serving and always test the temperature, as the cheese can get very hot.

Variations & Tips

  • Vary the veggies: You can also use eggplant slices or large sweet potato rounds as a base.
  • For the whole family: Adults can upgrade their mini pizzas with olives, mushrooms, or a little chili flakes.
  • Storage: The baked zucchini pizzas will keep in the refrigerator for about two days. Freezing is not recommended, as the zucchini becomes very soft and watery when thawed.
  • Adjusting the texture: For younger siblings, you can briefly steam the zucchini before adding toppings so it becomes even softer.

This recipe contains dairy products (Gouda) and therefore the allergen lactose and milk protein. Always introduce new ingredients one at a time and in small amounts to easily monitor for any reactions.

Make sure the cheese is made from pasteurized milk, as raw milk products are not suitable for young children. If you have any uncertainties about your child's diet or suspect an intolerance, it is best to speak with your pediatrician.
