Mini Bread Dumplings in Mild Mushroom Cream Sauce

Introduction

These little bread dumplings are wonderfully soft and easy for small hands to grab or pierce with a fork. The mild mushroom cream sauce brings a lovely savory flavor to the plate and provides valuable energy for active toddlers. Ingredients

For the dumplings:

  • 150 g stale bread rolls (about 3 rolls, cut into small cubes)
  • 100 ml lukewarm whole milk
  • 1 egg (medium size)
  • 1 tbsp finely chopped fresh parsley
  • 1 pinch of nutmeg

For the sauce:

  • 200 g fresh mushrooms (brown or white, ideally organic)
  • 1 small onion
  • 1 tbsp canola oil or mild butter
  • 100 ml low-sodium vegetable broth
  • 100 ml heavy cream (or oat cream)
  • 1 tsp mild paprika powder (sweet)

Preparation

  1. Place the bread cubes in a large bowl and pour the lukewarm milk over them. Cover and let the mixture soak for about 15 minutes until the bread is nice and soft.
  2. Add the egg, chopped parsley, and a small pinch of nutmeg to the soaked bread mixture. Knead everything with your hands to form a smooth, easily shapeable dough.
  3. Using slightly damp hands, form small, bite-sized dumplings from the dough. Bring water to a gentle simmer in a wide pot, making sure it does not reach a rolling boil.
  4. Place the dumplings into the hot water and let them cook for about 10 minutes until they float to the surface.
  5. Meanwhile, clean the mushrooms with a brush and cut them into very thin slices or small pieces. Peel the onion and dice it very finely.
  6. Heat the canola oil in a pan and sauté the diced onion until translucent. Add the mushrooms and fry gently for about 5 minutes.
  7. Deglaze with the vegetable broth and cream, stir in the paprika powder, and let the sauce simmer gently for another 5 minutes until it thickens slightly.
  8. Lift the finished dumplings out of the water with a slotted spoon and place them directly into the warm sauce. Allow everything to cool down well and always test the temperature before your child tries it.

Variations and Tips

  • Vegetable variation: You can mix finely grated carrots or zucchini into the dumpling dough to include an extra portion of vegetables.
  • For the parents: For the adult portion, you can easily season your plate at the table with a little salt, freshly ground black pepper, and a splash of white wine.
  • Storage: Leftovers keep well in the fridge for up to two days when covered. The dumplings can also be frozen uncooked and placed directly into hot water when needed.
  • Adapting the texture: For younger toddlers or beginners, you can lightly puree the mushrooms in the sauce before serving to create a smoother texture.
