Ingredients

- 130 g puff pastry (chilled, about half a roll)

- 50 ml milk
- 30 g grated cheese (such as mild cheddar or gouda)
- 1 pinch of sweet paprika
- 1 tsp canola oil or butter for sautéing
Preparation
- Preheat the oven to 200 °C (about 400 °F) and lightly grease a muffin tin.
- Wash the leek thoroughly and sauté it gently with the bacon in a pan with a little oil for about 5 minutes.
- Cut out small circles from the puff pastry and press them into the muffin cups to form a small crust.
- Whisk the eggs, milk, cheese, and paprika in a bowl until you have a smooth mixture.
- Distribute the leek and bacon mixture into the pastry cups and pour the egg mixture evenly over the top.
- Bake in the oven for about 15 to 20 minutes until the quiches are golden brown and fully cooked through.
- Allow them to cool well and always check the temperature inside before serving.
