Introduction
Bite sized pretzel snacks are wonderful for dipping into a mild cream cheese spread. The dough is typically brown on the outside and soft on the inside, which brings many children great joy while chewing. This savory classic provides energy for the afternoon and playfully supports fine motor skills through dipping.
Ingredients
- 250 g spelt flour (type 630 or all purpose, preferably organic)
- 150 ml lukewarm water
- half a packet of active dry yeast (approx. 3 to 4 g)
- 1 tsp soft butter
- 1 pinch of salt
- For the baking soda bath: 1 L water, 3 tbsp baking soda
- For the dip: 150 g plain cream cheese (full fat), 1 tbsp finely chopped chives, a splash of milk
Preparation
- Knead the flour, lukewarm water, dry yeast, soft butter, and a pinch of salt in a bowl until a smooth dough forms. Cover the dough and let it rest in a warm place for about 45 minutes, until the volume has visibly increased.
- Divide the dough into small, bite sized pieces and shape them into little balls.
- Bring the water to a boil in a pot, carefully stir in the baking soda, and reduce the heat. Place the dough balls into the gently simmering bath for 30 seconds each, remove with a slotted spoon, and place on a baking sheet lined with parchment paper.
- Bake the pretzel bites in a preheated oven at 200 degrees Celsius using top and bottom heat for about 12 to 15 minutes until golden brown.
- For the dip, stir the cream cheese with a splash of milk and the finely chopped chives until smooth. Let the pretzel bites cool down completely before serving, and always check the temperature before offering them to your child.
Variations and Tips
- Vegetable addition: Grate a small carrot very finely and mix it into the cream cheese for extra nutrients.
- Storage: The baked pretzel bites will keep in an airtight container in the fridge for up to 2 days. You can also freeze the raw, unboiled dough balls and boil them in the baking soda bath right before baking.
- Adjusting texture: For an even softer bite, you can shorten the baking time by 2 to 3 minutes.
- Family tip: Adults can season their portion of the dip more generously with black pepper, garlic powder, or a pinch of salt.
