Mini Vegetable Frittatas from a Muffin Tin

Ingredients

For about 6 to 8 mini frittatas (2 to 3 portions), you will need the following ingredients:

  • 4 eggs (preferably organic)
  • 50 ml whole milk (or an unsweetened plant-based alternative)
  • 50 g frozen peas (thawed beforehand)
  • 50 g red bell pepper (finely diced)
  • 30 g grated cheese (such as a mild Gouda or mozzarella)
  • 1 tsp canola oil or soft butter (for greasing the pan)
  • A small pinch of salt
  • A little fresh or dried parsley

Preparation

  1. Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit). Carefully grease the cups of a muffin tin with the canola oil or butter.
  2. Crack the eggs into a bowl. Whisk them together with the milk, a pinch of salt, and the parsley until a smooth mixture forms.
  3. Gently fold the thawed peas, diced bell pepper, and grated cheese into the egg mixture.
  4. Distribute the mixture evenly among the prepared muffin cups. Only fill the cups about three-quarters full, as the egg will puff up slightly during baking.
  5. Bake the mini frittatas in the preheated oven for about 15 to 20 minutes. They are ready once they are golden brown and fully set in the middle.
  6. Remove the muffins from the oven and let them cool well before serving. Always test the temperature inside before offering the snack to your child.

Variations and Tips

  • Swap the vegetables: You can easily replace the peas and bell peppers with grated zucchini, finely shredded carrots, or sweet corn.
  • Storage: The frittatas will keep in an airtight container in the fridge for about two to three days. They also freeze very well and can be reheated individually.
  • Adjusting the texture: For children who prefer softer vegetables, you can lightly steam the bell pepper in a little water beforehand.
  • For the whole family: Adults can enhance their portions after baking with a little black pepper, green onions, or a pinch of chili flakes.
