Moist Mini Lemon Bundt Cakes with Pistachios

Introduction

Ingredients

For about six mini cakes (two to three portions) you will need:

  • 100 g spelt flour (or all-purpose flour)
  • 1 tsp baking powder
  • 50 g soft butter (or mild vegetable oil)
  • 30 g coconut sugar or fine cane sugar
  • 1 egg (medium, ideally organic)
  • 30 ml milk (or oat drink)
  • Zest of half an organic lemon
  • For the glaze: 3 tbsp powdered sugar, 1 tsp lemon juice
  • For the decoration: 1 tbsp very finely chopped or ground pistachios

Preparation

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Lightly grease your silicone mini bundt cake molds.
  2. In a bowl, cream the soft butter and sugar together until fluffy. Add the egg and mix well until a smooth batter forms.
  3. Combine the flour, baking powder, and lemon zest. Stir the dry ingredients into the butter mixture, alternating with the milk.
  4. Fill the molds evenly with the batter. Bake in the preheated oven for about 15 minutes until the cakes turn golden brown.
  5. Let the cakes cool completely in their molds. For the glaze, mix the powdered sugar with the lemon juice until smooth, then spread it gently over the cakes.
  6. Finally, sprinkle the ground pistachios on top. Always check the temperature before eating if they are still slightly warm inside.

Variations & Tips

  • Fruity twist: Swap the lemon for orange zest or gently fold a few small blueberries into the batter.
  • Storage: The cakes keep well in an airtight container in the fridge for about two to three days. Without the glaze, they freeze beautifully for up to three months.
  • Adjusting texture: For younger siblings, you can omit the nuts entirely and replace the sugary glaze with a little unsweetened fruit puree.
  • Family tip: Adults might enjoy a dash of limoncello in their glaze, while the children's portions stick to classic lemon.
