Introduction

Preparation
- Preheat the oven to 180 degrees Celsius (standard bake) and line a muffin tin with paper liners or grease it lightly.
- Peel the carrots and grate them finely.
- In a bowl, whisk together the egg, oil, milk, and honey until well combined.
- Mix the spelt flour, baking powder, and cinnamon in a second bowl.
- Add the dry ingredients to the wet mixture and stir briefly until a smooth batter forms.
- Gently fold the grated carrots into the batter.
- Fill the muffin cups with the batter and bake in the oven for about 20 minutes until golden brown.
- Let the muffins cool completely and check the temperature inside before serving to your child.
