Pan-Fried Maultaschen with Egg and Colorful Bell Peppers

Ingredients

For 2 to 3 portions you will need:

  • 300 g Maultaschen (organic if possible, classic or vegetarian)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 3 eggs (medium size)
  • 2 tbsp canola oil or mild olive oil
  • 1 pinch mild paprika powder (sweet)
  • 1 pinch black pepper
  • A little fresh parsley (chopped)

Preparation

  1. Wash the bell peppers thoroughly, remove the seeds, and cut the vegetables into small, bite-sized cubes.
  2. Cut the Maultaschen into strips about two centimeters wide.
  3. Heat the oil in a large skillet over medium heat.
  4. Add the Maultaschen strips and bell pepper cubes to the pan and fry everything for about 5 to 7 minutes until the pasta pockets are lightly browned.
  5. Meanwhile, whisk the eggs in a small bowl and season them with the paprika powder and a little pepper.
  6. Pour the whisked eggs over the Maultaschen and peppers in the skillet.
  7. Let the egg set while stirring gently for about 2 to 3 minutes until it is completely cooked through.
  8. Sprinkle the fresh parsley on top and remove the pan from the heat.
  9. Let the dish cool down well before serving and check the temperature before your child takes the first bite.

Variations & Tips

  • Swap the vegetables: Instead of bell peppers, you can use zucchini or grated carrots. This brings new colors and flavors to the plate.
  • Storage: Leftovers can be kept in an airtight container in the refrigerator for up to two days. Freezing is less recommended due to the fried egg, as the texture often becomes rubbery.
