This skillet dish made from sliced Maultaschen, scrambled eggs, and mild peas is a wonderful meal for the entire family.   • 300 g Maultaschen from the refrigerated section (vegetarian or mild meat filling, large ravioli work too)
  • 2 fresh eggs (medium size)

  • 1 teaspoon finely chopped parsley
  • A tiny pinch of salt and pepper

Preparation

  1. Pour hot water over the frozen peas in a small bowl and let them thaw for about five minutes. Drain the water thoroughly.
  2. Cut the Maultaschen into bite-sized, narrow strips on a cutting board. Ensure the pieces are easy to pick up with small forks.
  3. Heat the canola oil or butter in a large pan over medium heat. Add the pasta strips and fry them for about three to four minutes until lightly golden brown.
  4. Meanwhile, crack the eggs into a cup and whisk them well with a tiny pinch of salt, pepper, and the parsley.
  5. Add the peas to the pan with the pasta and fry briefly. Then pour the egg mixture evenly over the top.
  6. Gently stir and turn everything until the egg is completely cooked through and firm.
  7. Serve the dish on a plate and let it cool down well before serving. Always test the temperature before your child takes the first bite.

Variations and Practical Tips

  • Swap the vegetables: If your child does not enjoy peas, sweet corn or very finely diced, soft-boiled carrots are excellent alternatives for this recipe.
  • Storage: Because this dish contains egg, it is best to store any leftovers in an airtight container in the fridge and consume them within one day. We do not recommend freezing fried egg, as the texture often becomes rubbery.
  • For the parents: Adults and older siblings can enhance their portions directly at the table with a dash of soy sauce, chili flakes, or fresh chives.
  • Adjusting the texture: For younger siblings, you can dice the pasta even smaller and lightly mash the peas before frying.
