
Pink Beetroot and Potato Mash with Mild Baked Fish

Ingredients
- 300 g potatoes (floury or baking variety)

- 200 g mild, boneless white fish fillet (such as cod or pollock, fresh or thawed)
- 2 tbsp wheat flour
- 1 egg
- 4 tbsp fine breadcrumbs
- 1 tbsp olive oil
- A pinch of mild paprika and some fresh parsley
Preparation
- Preheat the oven to 200 degrees Celsius (standard bake) and line a baking tray with parchment paper.
- Peel the potatoes, cut them into small cubes, and boil them in a pot of water for about 15 to 20 minutes until soft.
- Meanwhile, rinse the fish fillet under cold water, pat dry, and cut into bite-sized pieces.
- Place the flour, the beaten egg, and the breadcrumbs into three separate shallow dishes.
- Coat the fish pieces first in the flour, then dip them into the egg, and finally roll them in the breadcrumbs.
- Place the breaded fish on the baking tray, brush lightly with olive oil, and bake for 12 to 15 minutes until golden brown.
- Cut the pre-cooked beetroot into small pieces and puree it finely together with the milk.
- Drain the soft potatoes, add the butter and the beetroot puree, and mash everything into a creamy consistency.
- Refine the mash with a pinch of mild paprika and finely chopped parsley.
- Let the dish cool down well before serving and always check the temperature before your child takes the first bite.
