Baked Salmon with Creamed Spinach and Boiled Potatoes

This comforting dish provides wonderful nourishment during your pregnancy. Salmon offers valuable omega-3 fatty acids, while spinach is a great source of folate and iron. Because the fish is baked until fully cooked, you can enjoy it with complete peace of mind.

Ingredients for 2 to 3 portions

  • 400 g salmon fillet (fresh or thawed)
  • 400 g waxy potatoes
  • 400 g frozen creamed spinach (made with pasteurized milk)
  • 1 tbsp olive oil
  • A pinch of salt, pepper, and a splash of lemon juice
  • A pinch of nutmeg

Preparation

  1. Preheat your oven to 200 degrees Celsius (or 400 degrees Fahrenheit).
  2. Peel the potatoes, cut them into bite-sized pieces, and boil them in lightly salted water for about 20 minutes until tender.
  3. Place the salmon in a baking dish, drizzle with a little olive oil and lemon juice, and season mildly with salt and pepper.
  4. Bake the fish in the oven for about 15 to 20 minutes until it is completely cooked through and no longer translucent inside.
  5. Meanwhile, gently heat the creamed spinach in a small pot over medium heat and stir in a pinch of nutmeg.
  6. Serve the fully cooked salmon alongside the boiled potatoes and warm spinach.

Good to know

You can easily swap the salmon for trout or cod, as long as the fish is thoroughly cooked. Frozen spinach is very convenient because you can prepare just a small amount if your appetite is low.

As your pregnancy progresses, you might experience occasional heartburn. If this happens, simply skip the lemon juice on the fish and try eating smaller portions throughout the day.
