Jacket Potatoes with Creamy Herb Quark and a Dash of Linseed Oil
This classic dish is wonderfully comforting during pregnancy, as it combines easy-to-digest protein with satisfying carbohydrates. A splash of linseed oil provides plant-based Omega-3 fatty acids, which are a great addition to your diet right now. It is also an uncomplicated meal that feels light on the stomach and easily adapts to your current appetite.
Ingredients
- 800 g waxy potatoes
- 500 g quark (pasteurized)
- 3 tbsp milk or sparkling water
- 1 bunch of fresh herbs (for example chives and parsley)
- 2 tbsp cold-pressed linseed oil
- A pinch of salt and mild pepper
Preparation
- Wash the potatoes thoroughly and boil them unpeeled in lightly salted water for about 25 minutes until tender.
- In the meantime, wash the herbs, shake them dry and chop them finely.
- Stir the quark with the milk or sparkling water until it reaches a smooth and creamy consistency.
- Fold the chopped herbs into the quark and season gently with salt and pepper.
- Drain the soft potatoes, let the steam evaporate briefly and peel them if you like.
- Serve the potatoes with the herb quark and drizzle the linseed oil freshly over the quark right at the end.
Good to know
Linseed oil is very sensitive to heat and loses its valuable properties when warmed. It is best to keep the opened bottle in the refrigerator so the oil retains its mild, nutty flavor. You can easily prepare the herb quark the day before, allowing the herbs to infuse beautifully.
When it feels challenging
Towards the end of pregnancy, the growing belly often presses upwards, which can sometimes trigger heartburn. In this case, you can simply eat several small portions spread throughout the day. Skip onions or garlic in the quark and opt for lukewarm potatoes, as many women find them particularly soothing for the stomach.
