
Quick Gnocchi Pan with Spinach and Tomatoes
Introduction
This quick gnocchi pan is a wonderful family meal that is often very popular with children aged three and up. The soft potato dumplings are easy to chew, while the colorful vegetables provide essential vitamins for growth. It is an uncomplicated dish that comes together in no time on busy days.
Ingredients
- 400 g gnocchi (from the refrigerated section, organic if possible)
- 150 g cherry tomatoes
- 100 g fresh baby spinach
- 125 g mozzarella cheese (one ball)
- 1 tbsp olive oil
- 1 pinch sweet paprika
- 1 pinch dried oregano or basil
Instructions
- Wash and quarter the cherry tomatoes so they are bite-sized and safe to eat. Wash the baby spinach thoroughly and chop it roughly.
- Heat the olive oil in a large pan over medium heat. Add the gnocchi and fry gently for about five minutes until they develop a very soft crust.
- Add the quartered tomatoes to the pan and cook for another three minutes until they soften and release some juices.
- Stir in the chopped baby spinach and the spices. Let everything simmer for about two minutes until the spinach wilts.
- Remove the pan from the heat. Cut the mozzarella into small cubes, scatter them over the hot gnocchi, and let the cheese melt briefly.
- Allow the dish to cool slightly on a plate before serving. Carefully check the temperature before your child takes the first bite.
Variations & Tips
- Different vegetables: If your child is not fond of spinach, you can easily swap it out for finely grated zucchini or small broccoli florets.
- Storage: Leftovers keep well in an airtight container in the fridge for about two days. Freezing this dish is not ideal, as the mozzarella and fresh tomatoes often become watery when thawed.
- Adjusting texture: For younger eaters at the table, you can simply mash the gnocchi and tomatoes a bit smaller with a fork before serving.
- For the parents: Adults can easily upgrade their portion at the table with some freshly ground black pepper, a pinch of salt, or chili flakes.
