These refreshing cucumber cream cheese rolls make a wonderful snack for children around three years and older. They are not only easy to prepare but also encourage fine motor skills through rolling and promote independent eating. Furthermore, they offer a playful way to incorporate fresh vegetables into your child's diet.

Cucumbers provide plenty of fluids and vitamins, while cream cheese contributes valuable calcium and protein, essential for growing bones and developing muscles. Fresh herbs complete the flavor profile and can increase the acceptance of greens.

Ingredients (for 2-3 servings)

  • 1 medium organic cucumber
  • 150 g plain cream cheese (full-fat, no additives)
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely cut
  • Optional: a tiny pinch of salt (for children aged 3 and up)
  • Optional: a squeeze of lemon juice

Preparation

  1. Wash the cucumber thoroughly and slice it lengthwise into very thin strips using a vegetable peeler or mandoline. Place the cucumber slices briefly on kitchen paper to absorb excess moisture.
  2. Put the cream cheese into a small bowl. Add the chopped dill, chives, and optionally a tiny pinch of salt and a squeeze of lemon juice. Mix everything well until you have a creamy consistency.
  3. Lay each cucumber slice flat on a cutting board. Spread a thin layer of the cream cheese mixture over the entire surface. Be careful not to use too much filling, so the rolls hold together well.
  4. Carefully roll up the cucumber slices from one end to the other. Gently press the rolls to help them maintain their shape.
  5. Serve the cucumber cream cheese rolls fresh. You can also chill them briefly in the refrigerator before offering them.

Variations & Tips

  • Other Fillings: Instead of cream cheese, you could use hummus or a mild herb quark. For a sweet version, mix cream cheese with a little mashed banana and a pinch of cinnamon.
  • Other Vegetables: Try thin strips of zucchini (raw or briefly blanched) or carrots instead of cucumbers. These offer a different texture and additional vitamins.
  • Storage: The rolls taste best when freshly prepared. However, you can store them in an airtight container in the refrigerator for a maximum of 1 day. Note that the cucumber might release some water during storage.
  • Adjusting Texture: For younger children (around 18 months and up, with supervision), you can cut the cucumber slices into smaller pieces and serve the cream cheese separately. For older children, feel free to add a bit more seasoning, such as a dash of pepper or other fresh herbs.
  • For the Whole Family: For adults, these rolls can be enhanced with smoked salmon, prosciutto, or sun-dried tomatoes. A hint of garlic or some chili flakes also pairs wonderfully.
