Ingredients

For two to three portions, you will need:

  • 250 g whole milk plain yogurt (organic if possible)
  • 1 tbsp maple syrup or agave nectar
  • 50 g fresh raspberries
  • 20 g dark chocolate (at least 70% cocoa)
  • 1 tsp unsweetened almond butter (optional, for extra creaminess)

Preparation

  1. Line a small baking sheet or a flat dish with parchment paper.
  2. In a bowl, stir the plain yogurt with the maple syrup and almond butter until a smooth mixture forms.
  3. Spread the yogurt mixture onto the prepared parchment paper until it is about one centimeter thick.
  4. Gently wash the raspberries, pat them dry, crush them slightly, and scatter them over the yogurt.
  5. Finely chop the dark chocolate and sprinkle it evenly over the mixture.
  6. Place the dish in the freezer for at least three to four hours until the bark is completely solid.
  7. Before serving, break or cut the frozen sheet into manageable bars. Since the snack is very cold, encourage your child to enjoy it slowly.

Variations and Tips

  • Fruity variety: Simply swap the raspberries for finely diced strawberries, blueberries, or mango pieces.
  • Storage: The bark keeps well in an airtight container in the freezer for up to four weeks. This makes it easy to grab individual pieces whenever needed.
  • Adjusting texture: For a softer texture, you can omit the chocolate entirely or replace it with a swirl of mild fruit puree.
  • Family tip: Adults often enjoy adding some toasted coconut flakes or chopped nuts to their portion for extra crunch.
