Ingredients

  • 400 g watermelon (seedless)
  • 100 g feta cheese (pasteurized, organic if possible)
  • 2 sprigs of fresh mint
  • 1 tbsp mild olive oil
  • 1 tsp fresh lemon juice

Preparation

  1. Cut the watermelon into small, bite-sized cubes. Carefully remove any remaining seeds to make eating safe and easy for your child.
  2. Drain the feta cheese well. Then, cut it into very small cubes or crumble it finely with your fingers.
  3. Wash the fresh mint under running water and gently pat it dry. Pluck the leaves and chop them very finely so the flavor is not too overwhelming.
  4. Gently mix the melon, feta, and mint in a bowl. Drizzle the olive oil and lemon juice over the top and fold everything together softly.
  5. Let the salad rest for about five minutes before serving. Ensure the dish is pleasantly cool, but not freezing cold straight from the fridge. Always taste a small piece yourself before serving.

Variations & Tips

  • If the feta tastes too strong for your child, you can easily replace it with mild mozzarella cheese.
  • For a particularly appealing look, you can use small cookie cutters to shape the watermelon into stars or hearts. This brings great joy to many children.
  • For a little extra crunch, diced cucumber makes a wonderful addition to this recipe.
  • The salad tastes best fresh and can be kept in a sealed container in the refrigerator for a maximum of one day. It is not suitable for freezing, as the melon will become mushy.
  • Tip for the whole family: Adults can enhance their portions at the table with a little black pepper, toasted pine nuts, or a few drops of balsamic glaze.
