Rustic Blueberry Galette to Fold Together

Introduction

This uncomplicated baking project is wonderful for little helpers from twelve months onward, as the dough does not need to be perfectly round. Baking together supports fine motor skills, while the fresh berries provide valuable vitamins for growing bodies. It is a lovely opportunity to spend time together in the kitchen and enjoy a delicious result.

Ingredients

  • 150 g spelt flour
  • 75 g cold butter (in small cubes)
  • 40 ml cold water
  • 1 tbsp maple syrup or honey (for the dough)
  • 200 g fresh blueberries (organic recommended)
  • 1 tsp lemon juice
  • 1 tsp cornstarch (to bind the fruit juices)
  • 1 pinch of cinnamon
  • A little milk for brushing the crust

Preparation

  1. Quickly knead the flour, cold butter cubes, water, and maple syrup in a bowl until a smooth dough forms. Shape the dough into a ball, cover it, and let it rest in the refrigerator for about 30 minutes.
  2. Preheat the oven to 180 degrees Celsius (standard bake). Prepare a baking sheet with parchment paper.
  3. Wash the blueberries, drain them well, and mix them in a small bowl with the lemon juice, cornstarch, and cinnamon.
  4. Roll out the chilled dough on the parchment paper into a circle about three to four millimeters thick. The edges can be uneven and rustic.
  5. Spread the blueberry mixture in the center of the dough, leaving a border of about three to four centimeters empty.
  6. Fold the empty dough border rustically over the berries and press lightly. Brush the crust with a little milk.
  7. Bake the galette in the preheated oven for about 25 to 30 minutes, until the crust is golden brown.
  8. Let the pastry cool completely and always check the temperature of the filling before serving, as berries inside often stay hot for a long time.

Variations & Tips

  • Fruity Variety: The blueberries can easily be swapped for raspberries, finely chopped strawberries, or soft pieces of peach.
  • Storage: Stored in an airtight container, the galette will keep in the refrigerator for about two days. You can also freeze baked slices and briefly warm them in the oven when needed.
  • For the Parents: Adults might enjoy dusting their slices with powdered sugar after baking or serving them with a scoop of vanilla ice cream.
  • Adjusting Texture: For children who are still practicing chewing firmer pieces, you can lightly mash the berries with a fork before adding them to the dough.
