Introduction

Ingredients
- 250 g spelt flour
- 150 ml lukewarm water
- 15 g fresh yeast (or half a packet of active dry yeast)
- 1 tbsp olive oil
- 1 pinch of salt
- 50 g softened butter
- 2 tbsp finely chopped mild herbs (parsley, chives)
Preparation
- Dissolve the yeast completely in the lukewarm water.
- Mix the flour and a pinch of salt in a bowl, then add the yeast water and olive oil.
- Knead everything into a smooth, elastic dough and let it rest covered in a warm place for about 45 minutes.
- Thoroughly mix the softened butter with the finely chopped herbs.
- Roll the dough out into a rectangle on a floured surface and spread the herb butter evenly over it.
- Cut the dough into squares and stack them like an accordion into a small, greased loaf pan (approx. 20 cm).
- Bake the bread in a preheated oven at 180 degrees Celsius for about 25 to 30 minutes until golden brown.
- Let the bread cool completely after baking and always check the internal temperature before serving.
