This savory broccoli and ham quiche is a wonderful family meal that many children around three years of age enjoy trying. Ingredients
For 2 to 3 portions (small quiche dish, approx. 20 cm in diameter)
- 150 g spelt flour
- 75 g cold butter (cubed)
- 3 eggs (1 for the pastry, 2 for the custard)
- 1 pinch of salt for the pastry
- 200 g broccoli (organic preferred)
- 75 g mild cooked ham
- 100 ml heavy cream
- 50 ml whole milk
- 1 tiny pinch of nutmeg
- 1 tbsp mild herbs (like finely chopped parsley)
Preparation
- Quickly knead the flour, cold butter, one egg, and a pinch of salt into a smooth dough. Form the dough into a ball, wrap it, and let it rest in the refrigerator for about 30 minutes.
- Cut the broccoli into very small florets and boil them in water for about 5 minutes until soft. Drain well and set aside.
- Dice the mild cooked ham into fine pieces.
- For the custard, whisk the remaining two eggs with the cream, milk, a little nutmeg, and the mild herbs.
- Preheat the oven to 180 degrees Celsius (standard bake setting).
- Roll out the dough on a floured surface and line a small quiche dish, pressing it up the sides to form an edge.
- Distribute the broccoli and ham evenly over the pastry base, then pour the egg and cream mixture on top.
- Bake the quiche in the preheated oven for about 30 to 35 minutes until golden brown and the custard is fully set.
- Let it cool down well before serving. Always test the temperature before your child takes the first bite.

- Swap the vegetables: Instead of broccoli, soft boiled carrot cubes or peas work beautifully in this recipe.
- Storage: The quiche keeps well in the refrigerator for about two days when covered. It can also be frozen in portions and reheated in the oven when needed.
