- 100 g grated Gouda (mild)
- 1 egg yolk

- A little flour for the work surface
Preparation
- Place the spelt flour, soft butter, grated Gouda, egg yolk, and paprika powder in a mixing bowl. Knead everything with your hands until a smooth, cohesive ball of dough forms.
- Wrap the dough in a beeswax wrap or cling film. Let it rest in the refrigerator for about 30 minutes.
- Preheat the oven to 180 degrees Celsius (standard top and bottom heat) and line a baking tray with parchment paper.
- Sprinkle the work surface with a little flour and roll out the dough to about half a centimeter thick. Your child can now use various cookie cutters to stamp out the cheese cookies.
- Place the cookies on the baking tray and bake for about 10 to 12 minutes until golden yellow. Let the cookies cool completely before eating and check the temperature before your child takes a bite.

- Vary the cheese: Instead of Gouda, mild Emmental or finely grated butter cheese also works perfectly.
