  • 2 tbsp canola oil for frying

Preparation

  1. Wash the zucchini, trim the ends, and grate the vegetable coarsely. Squeeze the grated zucchini well in a clean kitchen towel to remove excess water.
  2. Combine the zucchini shreds in a bowl with the egg, grated cheese, and flour. Mix thoroughly until a sticky, moldable batter forms.
  3. Season mildly with salt and a touch of paprika.
  4. Heat the canola oil in a pan over medium heat. Use a tablespoon to place small portions of batter into the pan, pressing them down lightly.
  5. Fry the patties for about three to four minutes on each side until golden brown.
  6. Remove from the pan and let them drain on a paper towel. Allow to cool well before serving and always check the temperature inside.
