Ingredients

  • 300 g potatoes (waxy or all-purpose, organic if possible)
  • 50 g mild grated cheese (such as Gouda or mild cheddar)
  • 2 eggs
  • 3 tbsp spelt flour (or all-purpose flour)
  • 1 tbsp canola oil (plus a little extra for the waffle iron)
  • 1 pinch mild paprika
  • 1 tbsp fresh parsley (finely chopped)

Preparation

  1. Peel the potatoes and grate them finely using a box grater.
  2. Place the grated potatoes in a clean kitchen towel and squeeze out the excess liquid.
  3. In a mixing bowl, combine the grated potatoes, cheese, eggs, flour, oil, and spices. Stir until a smooth batter forms.
  4. Preheat the waffle iron to a medium setting and brush it lightly with canola oil.
  5. Spoon two to three tablespoons of the batter into the waffle iron. Bake for about five to seven minutes until golden brown.
  6. Let the finished waffles cool on a wire rack. Always check the temperature before offering them to your child.

Variations and Tips

  • Veggie boost: Swap a third of the potatoes for finely grated carrots or zucchini. Make sure to squeeze the liquid out of the zucchini as well.
  • Storage: The waffles will keep in the fridge for about two days. They also freeze beautifully and can be quickly reheated in the toaster.
  • For the whole family: Adults can enjoy these waffles with a fresh herb dip or a crisp side salad.
