Savory Pretzel Chestnuts from Yeast Dough

Baking together is a wonderful experience for many children. With this recipe, little hands can eagerly knead the dough and shape it into round balls. These small pretzel chestnuts are wonderfully crispy on the outside and soft on the inside. They make a perfect snack for in between meals or for a lunchbox.

While kneading and rolling, your child naturally practices fine motor skills. The soft yeast dough feels pleasant to the touch and is easy to shape. The magical moment happens during the quick baking soda bath: The dough balls change their surface and later get their typical brown color in the oven.

Ingredients

For about 2 to 3 portions (around 15 small chestnuts), you need the following ingredients:

  • 250 g spelt flour (type 630) or all-purpose flour
  • 150 ml lukewarm water
  • 10 g fresh yeast (or half a packet of active dry yeast)
  • 20 g soft butter (or a mild vegetable oil)
  • 1 pinch of salt
  • For the baking soda bath: 1 liter of water and 3 tablespoons of food-grade baking soda

Preparation

  1. Dissolve the yeast in the lukewarm water. Put the flour, butter, and a pinch of salt into a bowl.
  2. Pour in the yeast water and knead everything until a smooth, pliable dough forms. Cover the dough and let it rest in a warm place for about 45 minutes.
  3. Divide the dough into small pieces. Together with your child, shape round balls about the size of chestnuts.
  4. For the baking soda bath, bring the water to a boil in a wide pot. Remove the pot from the heat and carefully stir in the baking soda (caution, it will fizz up strongly).
  5. Let the dough balls slide individually into the hot baking soda water for about 30 seconds. Lift them out with a slotted spoon and place them on a baking sheet lined with parchment paper.
  6. Score the top of the balls lightly in a cross shape. Bake the chestnuts in a preheated oven at 200 degrees Celsius (top and bottom heat) for about 12 to 15 minutes until golden brown.
  7. Let the pastries cool completely on a wire rack. Always check the temperature before your child takes the first bite.

Variations and Tips

  • Sprinkle the moist dough balls with a little mild grated cheese or fine herbs before baking. This creates different delicious flavors.
  • The pretzel chestnuts keep well in an airtight container in the fridge for about two days. They are also excellent for freezing.
  • Freeze the fully baked and cooled chestnuts in portions. When needed, you can quickly warm them up in the toaster or oven.
  • For the whole family, you can shape larger pretzels or sticks from the same dough. Just increase the baking time by a few minutes.

This recipe contains wheat or spelt (gluten) and dairy products (butter). Always introduce new ingredients one at a time and in small amounts to easily observe any potential reactions. The hot baking soda bath belongs strictly in the hands of adults. Place the pot safely out of reach when your child helps with baking.
