Preparation

  1. Wash the pumpkin and carrots, peel if necessary, and grate them finely.
  2. In a bowl, whisk the eggs together with the milk and soft butter.
  3. Stir in the flour, baking powder, and finely chopped parsley until you have a smooth, creamy batter.
  4. Gently fold the grated vegetables into the mixture.
  5. Preheat a waffle iron and grease it lightly.
  6. Pour two to three tablespoons of batter into the iron and bake until golden brown (about 4 to 5 minutes per waffle).
