Ingredients
For 2 to 3 portions you will need:
- 2 small wheat tortillas (organic if possible)
- 50 g mild grated cheese (such as Gouda or Mozzarella)
- 3 tbsp sweet corn (canned, rinsed well, or thawed frozen corn)
- 1 tbsp finely diced red bell pepper
- 1 pinch mild paprika powder
- 1 tsp olive oil or canola oil for the pan
Preparation
- Place one tortilla flat on a plate and sprinkle the cheese evenly over it. Leave a small border around the edges.
- Distribute the corn, diced bell pepper, and paprika powder on top of the cheese.
- Place the second tortilla exactly on top and press down gently.
- Heat the oil in a non-stick pan over medium heat.
- Cook the quesadilla for about 2 to 3 minutes on one side until it turns golden brown.
- Flip the quesadilla carefully and cook the other side for another 2 minutes until the cheese is completely melted.
- Remove the quesadilla from the pan and let it cool on a cutting board. Cut it into small, manageable triangles and always check the temperature inside before serving.

- Vegetable swap: The corn can easily be replaced with finely chopped spinach or mild black beans.
- Storage: Leftovers can be kept in an airtight container in the fridge for up to 2 days. You can also freeze the triangles. Place a piece of parchment paper between the slices so they do not stick together.
