Savory Savoy Cabbage and Potato Casserole with Cheese

Mild savoy cabbage and soft potato slices in a creamy sauce, topped with a crispy layer of baked cheese. The baking process removes the cabbage's bitterness and leaves it pleasantly sweet. This hearty autumn dish gives children over three plenty of energy and makes family meals a cozy experience.

Ingredients

  • 400 g potatoes (waxy or all-purpose)
  • 300 g savoy cabbage (organic if possible)
  • 1 onion
  • 1 tbsp canola oil or olive oil
  • 200 ml whole milk
  • 100 ml low-sodium vegetable broth
  • 1 tsp cornstarch
  • 1 pinch of nutmeg
  • 1 pinch of black pepper
  • 75 g grated cheese (such as mild gouda)

Makes about 2 to 3 portions.

Preparation

  1. Wash and peel the potatoes, then cut them into thin slices.
  2. Clean the savoy cabbage, remove the hard core, and cut the leaves into fine strips.
  3. Finely dice the onion and sauté it in a pan with the oil until translucent.
  4. Add the cabbage strips and gently fry for about five minutes until they soften slightly.
  5. Pour in the milk and vegetable broth, bring to a boil, and season mildly with nutmeg and pepper.
  6. Mix the cornstarch with a splash of cold water, stir it into the sauce, and boil briefly until a creamy texture forms.
  7. Layer the potato slices and the cabbage sauce alternately in a baking dish.
  8. Sprinkle the grated cheese evenly over the casserole.
  9. Bake in a preheated oven at 200 degrees Celsius (180 degrees convection) for 35 to 40 minutes until golden brown.
  10. Remove the casserole from the oven and let it cool well before serving. Always do a temperature test before your child takes a bite.

Variations & Tips

  • Swap the vegetables: Instead of savoy cabbage, carrots or kohlrabi also work wonderfully in this bake.
  • Storage: Leftovers keep well in the fridge for about two days when covered. This dish is not ideal for freezing, as the potatoes can become mealy and watery.
  • For the whole family: Adults can sprinkle a little salt, freshly ground pepper, or roasted bacon bits over their portion at the table.
  • Adjusting the texture: For younger siblings, the soft potatoes and cabbage can easily be mashed with a fork right on the plate.
