Savory Spinach and Cheese Puff Pastry Triangles

Baking together is not only a lot of fun, but it also gently supports fine motor skills and concentration. When little hands knead dough or add toppings, they gather valuable sensory experiences. These savory spinach and cheese triangles are wonderful for little helpers aged three and up. The creamy filling provides many valuable nutrients, and cooking together builds immense confidence in the kitchen. Children are often much more excited to eat vegetables when they have helped prepare them. Plus, puff pastry is fascinating to watch as it rises in the oven.

Ingredients

  • 1 roll of fresh puff pastry (from the refrigerated section, approx. 275 g)
  • 150 g fresh spinach (organic recommended, as it often has a milder taste)
  • 100 g feta cheese (from cow or sheep milk, depending on preference)
  • 50 g cream cheese (plain, full-fat makes the filling especially creamy)
  • 1 small egg (for egg wash to create a beautiful golden crust)
  • 1 pinch of nutmeg (freshly grated offers the best flavor)
  • 1 pinch of black pepper (mild)

Preparation

  1. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Thoroughly wash the fresh spinach, shake it dry, and chop it very finely. Mix the spinach in a large bowl with the crumbled feta and cream cheese until a smooth, creamy texture forms.
  2. Season the mixture mildly with a pinch of nutmeg and a little pepper. Unroll the fresh puff pastry on the work surface and cut it into six to eight even squares using a knife or pizza cutter.
  3. Place a generous dollop of the creamy spinach and feta filling directly in the center of each pastry square.
  4. Fold the squares diagonally to create triangles. Your child can now easily help by pressing the dough edges firmly together with a fork to seal the pockets securely and create a pretty pattern.
  5. Brush the finished triangles with a little beaten egg and bake them on a parchment-lined tray for about 15 to 20 minutes until they are golden brown and crispy.
  6. Let the baked pastries cool down completely before eating. Please always test the temperature of the filling before serving, as the cheese inside often stays very hot for a long time.

Variations & Tips

  • Different Vegetables: Finely grated carrots or zucchini also make a fantastic alternative to spinach. It is important to squeeze out the grated vegetables well beforehand so the pastry does not get soggy.
  • Storage: Stored in an airtight container in the fridge, the triangles stay fresh for up to two days. They also freeze very well. It works best to freeze them flat and reheat them in the oven straight from the freezer when needed.
  • Adjusting Texture: For younger toddlers who still struggle with leafy greens, you can briefly puree the spinach together with the cream cheese instead of just chopping it.
  • Savory Twist: A teaspoon of mild tomato paste mixed into the filling adds a fruity note that many children love.
  • Picnic Idea: The spinach and cheese triangles taste excellent cold, making them an ideal snack for preschool or the next trip to the playground.
  • Family Tip: For adult portions, you can easily spice up a part of the filling with a bit of freshly pressed garlic, toasted pine nuts, or mild chili flakes.
