- 1 tsp dried thyme
Preparation
- Quickly knead the flour, cold butter, water, and a small pinch of salt in a bowl until a smooth dough forms.
- Shape the dough into a ball, wrap it in a beeswax wrap, and let it rest in the refrigerator for about 30 minutes.
- Preheat the oven to 200 degrees Celsius (top and bottom heat) and line a baking sheet with parchment paper.
- Wash and halve the cherry tomatoes carefully.
- Roll out the dough into a circle on the parchment paper (about 0.5 centimeters thick).
- Spread the goat cheese in the center, leaving a border of about four centimeters around the edge.
- Arrange the halved tomatoes on top of the cheese, drizzle with olive oil, and sprinkle with thyme.
- Fold the bare edges of the dough inward over the tomatoes and press down gently.
- Bake the galette for 25 to 30 minutes until the crust turns golden brown.
- Let it cool down well before serving, and always check the temperature first, as the tomatoes can get very hot inside.

- You can easily swap the tomatoes for thin zucchini slices or diced sweet bell peppers.
