Savory Vegetable Kaiserschmarrn with Mild Dip
This savory vegetable Kaiserschmarrn is a wonderful way to playfully introduce colorful veggies into your family meals. The soft texture and bite-sized pieces make it an ideal finger food for toddlers from one year of age. Enjoyed together at the family table, this vibrant dish naturally sparks curiosity for new flavors.
Ingredients
For the batter:
- 100 g spelt flour
- 100 ml whole milk (or plant-based alternative)
- 2 eggs (medium size)
- 50 g carrot (finely grated)
- 50 g zucchini (finely grated, gently squeezed)
- 1 tsp canola oil or mild butter for frying
- A tiny pinch of salt (use sparingly for toddlers)
- A little fresh, finely chopped parsley
For the mild dip:
- 100 g plain yogurt (whole milk)
- 1 tsp flaxseed oil (optional)
- A splash of lemon juice
Preparation
- Wash, peel, and finely grate the carrot and zucchini. Gently squeeze the grated zucchini to remove excess water so the batter does not become too runny.
- Separate the eggs and beat the egg whites in a clean bowl until stiff peaks form.
- Whisk the egg yolks with the milk, spelt flour, and a tiny pinch of salt to create a smooth batter. Then gently fold in the grated vegetables and parsley.
- Carefully fold the stiff egg whites into the mixture to keep the batter nice and fluffy.
- Heat the oil or butter in a non-stick pan over medium heat. Pour in the batter and let it cook for about 4 to 5 minutes until the bottom is golden brown.
- Carefully flip the thick pancake, let it cook briefly, and then tear it into bite-sized pieces using two forks.
- For the dip, simply mix the yogurt with the lemon juice and a little flaxseed oil.
- Let the Kaiserschmarrn cool down well before serving and always check the temperature before your child takes a bite.
Variations & Tips
Feel free to vary the vegetables depending on the season. Finely grated pumpkin or sweet potato work exceptionally well for this recipe.
Parents can easily season their own portions at the table with a little pepper, herb salt, or roasted seeds. This way, everyone enjoys the exact same meal together.
Leftovers can be stored in the fridge for one to two days. Simply reheat the pieces briefly in a pan or serve them cold as an on-the-go snack. The shredded pancake also freezes beautifully. Portion it into an airtight container for quick meals later.
Allergy & Safety Information
This recipe contains eggs, wheat (spelt), and dairy. These ingredients are common allergens. Always introduce new foods one at a time and in small amounts to carefully observe any potential reactions.
Make sure the pancake is fully cooked through. Raw or undercooked eggs are not suitable for toddlers. While honey is allowed after 12 months, this savory dish does not require any sweeteners.
If you have any concerns about introducing solid foods or suspect an allergy, please consult your pediatrician.
Nutritional Value
The combination of eggs and milk provides valuable protein and calcium for strong bones. The hidden vegetables add an extra portion of vitamins and fiber to the daily diet. Adding canola or flaxseed oil enriches the meal with important omega-3 fatty acids.
