
Small Zucchini and Carrot Pan Fritters
Introduction
These small zucchini and carrot fritters make a wonderful snack for children aged three and up. They combine nutritious vegetables with a soft texture that many children really enjoy. Preparation
- Wash and prep the vegetables thoroughly. Finely grate the zucchini and the carrot using a box grater.
- Squeeze the grated vegetables well with your hands to remove excess water, keeping the batter from becoming too runny. You can discard the excess liquid.
- In a bowl, mix the vegetables with the egg, flour, cheese, and parsley until you have a smooth, even batter.
- Heat the canola oil in a pan over medium heat. Canola oil is especially good here because it handles heat well and provides valuable fatty acids.
- Drop small spoonfuls of the mixture into the pan and press them down slightly. Fry the fritters for about three to four minutes on each side until they are golden brown and cooked through. Make sure not to set the heat too high, so the fritters do not burn on the outside while remaining raw on the inside.
- Let the fritters drain on a paper towel and cool down well. Always check the temperature yourself before serving to ensure your child does not burn their mouth.
