Introduction

These soft baby gingerbread cookies bring the magic of the holiday season to your child's plate. Ingredients

  • 1 ripe banana (organic recommended)
  • 50 g quick oats
  • 1 tbsp unsweetened applesauce
  • 1 tsp canola oil
  • A tiny pinch of Ceylon cinnamon (use very sparingly)

Preparation

  1. Preheat the oven to 180 degrees Celsius (standard bake) and line a baking sheet with parchment paper.
  2. Mash the banana in a bowl with a fork until it forms a smooth paste.
  3. Thoroughly mix the oats, applesauce, canola oil, and Ceylon cinnamon into the mashed banana.
  4. Let the dough rest for about 10 minutes so the oats can absorb the moisture.
  5. Using wet hands, shape the mixture into small, flat cookies and place them on the baking sheet.
  6. Bake the gingerbread for 12 to 15 minutes until they are lightly golden but still soft.
  7. Let the cookies cool completely and always check the temperature before offering them to your child.

Variations & Tips

  • For a different flavor, you can swap the applesauce for unsweetened pear puree.
  • The cookies can be stored in an airtight container in the fridge for about two days.
  • They are very freezer-friendly. Simply thaw the cookies at room temperature when needed.
  • Family tip: Older children and adults might enjoy these topped with a little almond butter or honey (remember that honey is not safe under 12 months).
