Soft Broccoli Cheese Medallions for Toddlers
Introduction
These soft broccoli cheese medallions are wonderful for toddlers from around twelve months, as they are easy to grasp and chew. They provide valuable energy and important nutrients for a growing body. Baking together is a lot of fun and gently sparks curiosity about new vegetables.
Ingredients
- 250 g broccoli (fresh or thawed)
- 50 g grated cheese (mild, like young Gouda or mild cheddar)
- 1 egg (medium)
- 40 g rolled oats (fine or quick oats)
- 1 tbsp olive oil
- A pinch of mild herbs (like parsley)
Preparation
- Cut the broccoli into small florets and steam them in a pot with a little water for eight to ten minutes until tender.
- Drain the water and let the broccoli cool slightly.
- Mash the warm broccoli finely with a fork in a bowl.
- Mix the grated cheese, egg, oats, olive oil, and herbs into the mashed broccoli.
- Stir everything into a sticky but moldable dough and let it rest for five minutes.
- Preheat the oven to 180 degrees Celsius (standard bake) and line a baking sheet with parchment paper.
- With damp hands, form small medallions, place them on the sheet, and bake for about 15 minutes until golden brown.
- Let the medallions cool completely before serving and check the temperature to ensure your child does not burn their mouth.
Variations & Tips
- Variations: You can easily swap the broccoli for grated carrots or soft cooked cauliflower.
- Storage: The medallions stay fresh in an airtight container in the fridge for up to two days. They also freeze beautifully and can be reheated in the toaster or oven when needed.
- Texture: For older children, you can mix some sweet corn or small peas into the dough for a bit more bite.
- For the parents: Simply season your own portion on the plate with a little salt, pepper, or a pinch of chili flakes.
